Chilolo's Tacos (Georgetown)
A super popular taco trailer goes brick and mortar
I never knew Chilolo’s days as a trailer/truck but it’s great to see a place start there and move into a brick and mortar -not to mention what seems like a prime location on a busy intersection.
I came just before lunch on a workday and there was a steady stream of folks both in and out and a handful seated. After a quick wait in line and my usual panic of what to order I wanted to try and do what I did at Carnitas Michoacan and get one taco of each in spirit of the Lord’s work we all do on the Internet talking about food. The menu had an option for 4 and 6 tacos which I assumed could be purchased as an assortment -wrong.
I asked if I could just buy each one then for an a la carte price and was told no. Now, I’m all about places that don’t want to mess up their line with custom orders but I kinda feel like a taco shop should at least let you sample more than one type of a taco on an order. This was a bummer but hopefully they’ll change it in the future.
In dismay, and not wanting 4 of one kind of meat I defaulted to Al Pastor which I love and in burrito form:
Unfortunately, after walking a good five blocks to get back to my car since parking isn’t super hot either, I was half way through my burrito when I realized it really could have used some al pastor.
The tortilla was great -I love when it’s properly grilled. The rice was good, as were the beans, and the pico de gallo-ish mix also fresh and good. The thing it really lacked was any decent amount of meat.
Overall I think it could have been better: an expanded option for tacos, maybe more filling on the burritos. Quality was great though and came with some excellent salsa roja.
