Over nine years ago I wanted to make a website where I tried to do a good job of providing recipes for food. I’d had a history of why I loved cooking similar to that of just about everyone else that loved/liked/was passionate about cooking, but as an annoying person for technical details I found many online recipes, and some books, poorly written either in process, ingredients, or both.
I initially started a blog trying to do a ‘better’ job of the shortcomings I’d experienced. I tried to be cool, entertaining, do a good job of explaining something, etc. I realized through four iterations of this site I failed at that each time. I was either pretentious, repeated the mistakes or lapses I criticized, or just generally did a shitty job. This is my current version of trying to do something right.
I’ve realized there’s three main things I thought other people might actually find useful: 1) my evolution of trying to get specific recipes right. 2) “city guides” as a sort of sharing amazing things I’ve seen and hoping it’s of some use to others. 3) context -in the sense of why these city guides or why these recipes mean anything to me and why they might be of value to anyone else.
As a recent transplant from LA to Seattle I was concerned, of all things, about Mexican food. My need for some of life’s greatest gifts of breakfast burritos and pozole outweighed having snow in the winter and months of rain. A part of this fear was the lack of coverage on the Internet talking about Mexican or Latin food in the Seattle area. Granted it’s not like there’s zero coverage of Mexican places but I’m coming from a place where there’s literally city wide competitions to declare who has the best taco and an army of people who take to the Internet to talk about it. I can type, take pictures with a phone, so I’m going to do my best to expand the subject.
I literally don’t know. Somewhere in the 90s where it was cool to change AOL instant messenger handles I for some reason went from one dumb name to another and never left ‘thebigcafeteria’
